Waste vegetable oil is traded on the commodities market as "Yellow Grease" and can fluctuate in value throughout the year. Restaurants that donate their used cooking oil to the Alternative Fuel Foundation will recieve documentation stating the amount of gallons donated as well as the average yearly commodity price of yellow grease. Many restaurants can receive up to a $5,000 tax deduction which is the equivelent of getting paid $0.60-$0.75 per gallon!
